I have dinner in the crockpot.....its from the Weight Watchers All in Good Time crockpot recipe book:
Pork Roast
1 can Whole Cranberry Sauce
1 Tbsp brown sugar
1 tsp prepared yellow mustard
Cook in crock pot for about 8 hrs. low.....
Today I added carrots cause DH wanted them, but sometimes I cook Sweet potatoes in it and the cranberry sauce is the perfect flavor with them.
you can add cornstarch and a little water at end to thicken the sauce.
I have also already cooked and mashed some hubbard squash and mixed it with some pumpkin pie spice and brown sugar to reheat later.
I am in such a fall mood and needed some easy things as my grandmother is in the hospital out here recovery from surgery. My grandfather, mother and aunt are also all here. My family is from 2 hours west of here, but the best hospital for her surgery was nearby me, so I have had a houseful. I definitely have enjoyed cooking up a storm for them!!! Love an excuse to cook and with just DH and I, its sometimes hard to get motivated.
