Disney's Animal Kingdom
Lunch: Flame Tree BBQ
Dinner:
Tusker House (not many choices for dinner)

Disney's Hollywood Studios
Lunch:Rosie's All American Cafe
Dinner:
Brown Derby

Epcot theme park
Lunch:Sunshine Seasons
Dinner:
Le Cellier

Magic Kingdom
Lunch: Cosmic Ray's
Dinner:
Tony's Town Square

I am really looking forward to hearing your suggestions!!

The choices may change depending if you are looking for a character dinner

Disney's Animal Kingdom
Lunch: Picnic in the Park or Flame Tree
Dinner: Tusker House or Yak & Yeti

Disney's Hollywood Studios
Lunch: Fairfax Fare
Dinner: Mama Melrose

Epcot theme park
Lunch: Sunshine Seasons
Dinner: Coral Reef or Tutto Italia (depending whether seafood or Italian is your preference)

Magic Kingdom
Lunch: Cosmic Rays or Columbia Harbor House
Dinner: Take the monorail to either: Contemporary - The Wave, GF - Grand Floridian Cafe, or Poly - Kona Cafe

AK- lunch- Pizzafari, has a good italian sammy
dinnner-Yak and Yeti

Epcot-Sunshine Seasons
Lecellier

DHS- Backlot or Starring rolls
Scifi or Prime time

MK- Cosmice Rays, Columbia Harbor House
Tonys

you can easily go to restaurants outside the park without disrupting your touring. For example the resort monorail loop at the MK makes it easy to get to the Contemporary, Polynesian and Grand Floridian resorts. That adds California Grill, The Wave, Kona, Ohana, Grand Floridian Cafe, Narcoossee's, Citricos and Victoia & Alberts to the restaurant mix. It's a short ride from Disney's Animal Kingdom to Animal Kingdom Lodge where Boma and Jiko are located.

Also what do you define as a nice dinner? There are what Disney classifies as a signature restaurant which is has a higher level of service and generally more creative or higher level of food. There are also non signature restaurants that are well worth eating at.

Answering your initial question:

MK: Columbia Harbor House and Liberty Tree Tavern

Alternatives outside park: Wave, Citricos and Kona

Epcot: Tangierine Cafe and Bistro de Paris

Alternatives outside park: Flying Fish and Yachtsman's Steak House

DHS: Backlot Express and 50s Prime Time

DAK: Flame Tree Barbecue and Yak and Yeti

Alternatives outside park: Jiko and Boma

I agree with hopping on the monorail from MK. I personally like Kona Cafe.

Disney's Animal Kingdom
Lunch: Flame Tree BBQ. Really good ribs here.
Dinner:Yak & Yeti. Not bad stuff here. We like the steak and tempura shrimp. Appetizers were good too.

Disney's Hollywood Studios
Lunch: CS are bit on the weak side here. Nothing I can recommend here at this time. We are trying Fairfax Fare, in a few weeks. Perhaps then I can give a better report..
Dinner: 50's Prime Time Cafe. Good classic american food..

Epcot theme park
Lunch: We usually do two TS in Epcot. We've liked the Cantina de San Angel, but that may be under refurbishmen when you are there. Sunshine seasons is also good. Lots of choices there.
Dinner: OMG. So many choices here. Our favorite is Le Cellier. We're big meat and potatoes people. That said, we've enjoyed Teppan Edo, Rose & Crown, San Angel Inn, Akershus (this has characters), and Coral Reef..

Magic Kingdom
Lunch: Cosmic Rays. Good vvariety of choices here, but it is usually insanely crowded. .
Dinner: Liberty Tree Tavern. Again with the meat and potatoes. Tony's Town Square is also very good..

You are welcome. MK has some good counter service options. We also like Pecos Bill's, and Columbia Harbor House for counter service.

We've been known to do two counter service in MK, just so we can do two Table service in Epcot. You aren't limited to one each per day.
