Your Go-To Potluck Dish

Pasta salad, I have a homemade dressing that is amazing!

I normally bring 3 things dip, main, dessert.

Main always depends on what I feel like making or what's in freezer, smoked pulled pork, bacon pasta bow ties, chicken rice dish.

Avocado salsa dip. Must have because I want to eat it all

M&M meatballs and Diana sauce in a crock pot.

M&M's is a frozen food store and Diana sauce is a bottle of BBQ sauce (both the store and the sauce might be Canadian - not sure) But for me, it has to be the these meatballs and the this particular sauce. :thumbsup2

Which flavour do you use?

I use the honey garlic Diana sauce to make something my mom always called "Poor Man Spareribs", which was essentially just a pack of Red Hot hotdogs (it HAD to be this kind) covered in Diana honey garlic sauce, and either baked in the oven or slow cooked. Come to think of it, I think that'd make a good potluck dish as well! :)

Diana sauces are definitely the way to go if you don't make your own sauces!

Stuffed Mushroom Casserole

1 stick of butter
1 small onion, chopped
Mushrooms (I tend to buy the sliced ones, about 3 or 4 pint sized containers.)
breadcrumbs
grated Parmesean cheese

Melt the butter, and add the chopped onions. Saute until soft.

Add the mushrooms and cook until they're soft too. Turn off the heat, and add breadcrumbs and cheese. Put into baking dish-- I use Corning Ware so it can go right to the table and bake for 15-20 minutes at 350 degrees.

Tastes just like stuffed mushrooms, but takes just minutes to throw together!!

Our neighborhood has an annual Labor Day potluck. I guess I'd better start thinking about what to make!

Last year, I made a southwest salad that went over pretty well. I mixed chopped lettuce, tomatoes, shredded cheese, and black beans. I topped it with salsa, sour cream, and tortilla strips. People seemed to like it. Another year, I made a big baked rigatoni with ground beef, pasta sauce, and topped with shredded mozzarella.

The best thing at the potlucks is a meatball dish that one of our neighbors makes. They are so good. No one dares to bring meatballs because his will always be so much better. Even his wife doesn't try to make his recipe. Only Charlie can make the neighborhood meatballs!:)

OP-- I make a very similar version of that salad, but I've never heard it called "Mad Hatter Salad." I took it to a few cookouts over the summer, and it went over well!

The other thing I do a lot is cheesy potato casserole (but only if my neighbor won't be there, because then I know she'll bring them :thumbsup2) This is DD9's favorite!

And I almost always bring a big bowl of watermelon, because my DD11 is very picky. She won't eat most casserole/mixed salad type dishes, so this way I can ensure she will eat more than potato chips! ;)

We usually take a big tray of spaghetti with vegan meat sauce. Parmesan cheese on the side for those who wish to have the cheese. This is our go to and it makes sure that I have something to eat that is safe for my allergies. As a person with allergies can I suggest that people take a card with an ingredient list and tap it to the serving container. I hate having to hunt down the maker of each dish to see if I can eat it safely and usually only eat what we bring

Four Cheese Smoked Mac 'n' Cheese

What You'll Need:

1 (16-ounce) package elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
3 cups milk
1 (8-ounce) package cream cheese, cut into large chunks
1 teaspoon salt
1/2 teaspoon black pepper
2 cups (8 ounces) extra sharp Cheddar cheese, shredded
2 cups (8 ounces) Gouda cheese, shredded
1 cup (4 ounces) Parmesan cheese, shredded

What To Do:

Load the wood tray with one small handful of wood chips and preheat the smoker to 225 degrees F.

Cook pasta according to package directions. In a medium saucepan, melt butter, and whisk flour into the butter. Cook over medium heat for 2 minutes, until sauce is bubbly and thick. Whisk in milk and bring to a boil. Cook 5 minutes until thickened. Stir in cream cheese until mixture is smooth. Add salt and pepper.

In a large bowl, combine 1 cup Cheddar, 1 cup Gouda cheese, Parmesan cheese, pasta, and cream sauce. Spoon mixture into an 11 x 9-1/2-inch aluminum roasting pan coated with nonstick cooking spray. Sprinkle top with remaining Cheddar cheese and Gouda cheese.

Place in smoker and cook 1 hours at 225 degrees F, until brown, bubbly and delicious.

This recipe is from John McLemore's "DADGUM That's Good!" Cookbook.

This sounds yummy! I think I will make it and sprinkle bacon on top!

Hot Dish
Ground Beef (or Turkey), frozen green beans and corn, cream of mushroom soup, top it with tater tots....bake it. Throw shredded cheese on top towards the end.

OK I have been guilty of making baked beans too. Pour a can of Bushs baked beans in the crock pot, throw some bacon in with it. People think you actually made baked beans.
