The street performers (especially the steel drum player in front of Pirates if you can catch him) are always a hoot and will ham it up for the camera. Aerial views of the park from the people Mover (especially good if you time it to be riding during Wishes!). Along the walkway surrounding the statue of Walt and Mickey there are small bronze statues of a lot of the characters, these are very unique closeups few people get.
Take pictures of the World pavillions from deep INSIDE the pavillion at epcot, not just as you're entering it. No flashes of the fish tanks at Living Seas, of course . . . the sets as seen from the Garden Grille in the Land are good, as are the banners and flags outside Innoventions for family backdrops.
At MGM, as you're entering the Star Tours ride, you can scoot under the rope by the lifted foot of the AT-AT and have people pose for photos; the CM's don't mind (though I always ask first in case this changed). And don't miss the speederbike across the way from Star Tours, family can sit on it for pictures.
Animal Kingdom, you can usually get a CM to get Simba to look up for a photo after the end of the Festival show. Small kids on shoulders so they can pose with Simba! (No, you can't climb the rock and sit with him, I asked. XD ) Get pictures of the animals along the walkways, and there's some very dynamic performances in the street in Harambe, and the performers will often be happy to pose with family members.
