Is Yak & Yeti QS open? I did not see them on the mobile order list.

Yes, they're open. Not all restaurants participate in mobile order, especially the non-Disney owned spots like Yak & Yeti.

I walked past a week or so ago and I think some of the tables were removed but otherwise looked the same. I saw people in line but didn't pay much attention, honestly, since we were waiting on our table at Y&Y.

We ate there late October. We just walked up to order. We were disappointed in the food, it wasn't as good as we had remembered in the past.
