Anyone have some quick and easy brunch ideas for me?? I want to save myself from the overwhelming task of making a dinner for 15 people on Xmas. I'm tired of the kids opening all their toys and pieces being scattered everywhere beacuse I'm too busy cooking to watch them. I want to be able to relax this year ugh!!!! Anything that can be made ahead??
Thanks for any suggestions.

Breakfast casserole?
Easy as can be.

You can even cook it the night before and put it in to warm that am....
Lots of different recipes.

I make a quiche. i used a prepared crust & prep all the ingredients the day before. I just toss it in the oven in the morning for an hour. i also make 2-3 different types of muffins & put them in the freexer. I will thaw them out & put them in the microwave to heat up. I will by already cut up fruit from the grocery store.

I second the breakfast casserole -- I do one every year. Assemble the night before, put it in before we open presents, and it's done when we are.

We set out the Christmas cookies and quick breads (cranberry, date, pumpkin), as well as candy if we received any. Nuts, coffee, and egg nog (heavy on the booze..it's only once a year). We've had years that I've picked up bakery (real old fashioned bakery, not grocery bakery) danish, which goes over well, too.

You can make a fruit salad ahead -- just dip the apples, pears (anything that browns) in orange juice (lemon juice works, too, but I don't like it) and cover well and refrigerate the night before.

My answer... Crockpot!!! Leave it on overnight and never miss a Christmas present again.

Crock Pot Breakfast

Ingredients
32 oz. frozen shredded hash browns
1 pound(s) cooked ham, cubed
1 onion, diced
1 green pepper, diced
1 1/2 c shredded cheese
12 eggs
1 c skim milk
1 tsp salt
1 tsp black pepper
Directions
Divide hash browns, ham, veggies and cheese so you can create several layers of each in the crock pot. Start with the hash browns, then ham, onions peppers and last cheese. Repeat until you have several layers. Beat eggs, milk salt & pepper pour over layers in the crock pot cover and turn on low. Cook for 10-12 hours overnight.

The CrockPot recipe sounds great but will not feed 12 -15 people. I would have to get more crock pots...:) Anyone care to share some egg casserole recipes??

I would do a few breakfast casseroles/stratas, some crockpot oatmeal and throw a ham in the oven. You can find recipes on allrecipes. Also look for crock pot oatmeal recipes. If you have company ask them to bring something like stringbean casserole or rolls so you do not have so much work yourself.

We fix a breakfast casserole the night before and bake it the next morning. We also have ham biscuits, fruit, and pastries. I used to bake my own pastries, but now I pick up 2 or 3 fancy pastries from a local bakery, cut them up into 2" pieces and arrange them on a platter. We have a nice variety, and I don't stay up late baking. We have Christmas dinner that evening.

Seems like we had a thread last year with some of those french toast casseroles - the ones where you assemble the night before, then throw into the oven. They sounded good. I'd make some with eggbeaters, instead of whole eggs.

HI again,
I'm planning this brunch instead of dinner. I don't want to slave all day cooking. I just want to relax and enjoy the kids' new toys with them.
