Sauteed Radishes

Radishes (red or white)
Butter
Salt & pepper to taste

Slice radishes about 1/8" thick. Sautee in butter on medium high heat until radishes turn translucent and lightly brown. Season with salt and pepper. Serve warm.

Couldn't get much simpler! The radishes will lose their bite as you saute them... the flavor comes out very mellow. Using all red radishes will end up pink (kind of pretty!). An unusual side, but quite good.
 
Green Beans

3-4 slices bacon
1/2 medium yellow onion, minced
1/2 pound fresh green beans
2 Tbs. butter
Salt & pepper

Cook bacon in large skillet. Once crisp, remove from pan and set aside. Add onions to bacon grease in skillet and sautee 5-10 minutes. Add whole green beans and 1/4 cup water to pan. Cover and sautee until green beans are tender. Watch to make sure onions don't burn... add liquid if necessary. Once beans are tender, add butter and crumble bacon over beans. Season with salt and pepper and serve.
 
Broiled Tomatoes

Ripe tomatoes
Olive oil
Mrs. Dash
Salt
Freshly shredded parmesan

Cut ripe tomatoes into wedges. Place wedges on cookie sheet, and drizzle lightly with oil. Season with Mrs. Dash and salt (or whatever spices you desire/have on hand... basil, garlic powder, etc). Broil until tomatoes begin to brown slightly. Remove from oven, sprinkle with shredded parmesan and return to broil until cheese bubbles and browns.

These are good both warm and cold.
