WWYD Dining plan HDDR

I want to go to the HDDR. I called about making reservations and they will be $248 for 3 adults and 1 child for the 9:30 show. I want category 1 and thery only had it at the 9:30 show.
I am staying at my DVC and was thinking of booking the meal plan. I will have 3 adults and 1 child for 2 nights then 2 adults and the child.
If I pay for 3 adults and 1 child for the 5 nights it will cost me $750 for the 5 nights. Then if I use the dining plan for HDDR I will be left with 9 TS meals. That works out to cover us for the next 4 nights since one adult will be leaving.
Does anyone else think this is a good idea rather than paying seperately for all our meals?
the one problem I see is that this will cover us for July 10 through the 15th and since we have no reservations yet we might not get very good restaraunts for the Table service if we even get any at all.
Where would you recommend trying for reservations for table service at this late date?
I know I could change the TS to QS and be able to eat 3 meals a day which might work out because we do eat 3 meals a day and don't do desserts etc and I would save on tips with using the QS for the rest of the trip.
We do like going to Coronado Springs for Pepper Market and these QS make a great TS meal.
Any advice is helpful, I am going crosseyed looking at everything i have to plan since eveyrone always just says "whatever you plan is good with me"
