Wow! Spaghetti squash is great!

I didn't believe it. Refused to try it for years. I finally tried it last night and it was really good! I had it with meat sauce last night, and just had it leftover with some butter and spices for lunch today. It really did "scratch the itch!" I thought it was a bit pricey, but worth it.

My sister has been itching to try this ever since she saw it on the Low Carb Revolution show. Did you do what he did or did you have a different recipe? I'd really like to see how it tastes. Does it really "taste" like spaghetti?
 
I love it too. I am on Phase 1 of the South Beach Diet and we are not allowed any pasta for the first 14 days. After that, whole wheat only. I made a great sauce with crushed tomatoes, sauteed garlic, onions and italian seasoning and let it simmer for a while. I then added shrimp to the sauce. I put mine over spaghetti squash and my family had it over regular pasta - add a little parmigianna/romano cheese and EVERYONE was happy!
 

I was a non-believer about the cauliflower tasting like mash potatoes but it's true too. Okay, they don't taste exactly like mash potatoes but pretty close. You make me want to give that spaghetti squash a try. Thanks for reporting!
 
I hated it!!! Looked like pasta,but no way did it taste like pasta!!
I fixed it Alfredo style. Still couldn't choke it down. My SO loved it!!
There was alot leftover so I added a few eggs and a little cream and made a quiche thinking maybe I would like it better this way-----NO!!! It has a veggie "crunch" to it. I think that's wahat turned me off to it. But the good news,my dogs loved it!
 
I love spaghetti squash! The first time I made it, it wasn't quite soft enough. The next time I nuked it longer after cutting it in half, and it was just like the consistency of spaghetti. It really doesn't taste like spaghetti, but just close your eyes and use your imagination. It's really quite good! Make sure to put toppings on it...sauce, butter, parmesan cheese, stir fry, etc.

I bought my first spaghetti squash tonight, but...... how do I fix it? Is there a specific way it should be cut and cooked? A lot of recipes say to use cooked spghetti squash, but in what way should I cook it? Thanks in advance!!

I don't think it tasted "just like" spaghetti, but was just so amazingly better than I expected - I liked the taste. It's really the sauce and stuff you put with it that does it for me anyway. I have such an addiction to pasta it's not something I can eat in moderation. I felt so much freedom feeling like I could have as much as I wanted. I wasn't expecting to like it so much, thus my excitement. I'm bummed for those who didn't like it!

I did have a tough time cooking it though. I would love to hear the microwave directions because the oven takes quite a bit of time. I just followed the directions on the little sticker stuck on the squash. I microwaved it for about 5 min to soften it to cut it in 1/2 (it was hard to cut), and then scooped out the seeds. Then I baked it cut sides down in a pan with a bit of water in it at 350 for 45 minutes. Fortunately I was home that day and started it early, because then I turned it right side up and cooked it for another 1/2 hour. I figure I can cook it the night before - it didn't seen to get too mushy in the fridge. Does anyone know if it freezes reasonably?
 
It is hard to cut! I get DH to cut it in half for me (lengthwise), scoop out all the seeds, then put one half in a microwavable dish facing up with about a tablespoon of water in it (I don't know if the water is really needed). I microwaved on high about 10 minutes or so depending on size. The first time I did it for about 7 minutes and it wasn't quite done. You'll have to let it cool a little before handling. Then get a fork and scrape the insides into a microwavable bowl (for reheating). If you can scrape down to the skin, it's completely done.

I then add a little butter and reheat. If you're adding a sauce or something hot to it, you won't have to reheat.

The one half is more than enough for two people. If you're making the whole squash, you'll have to cook longer...probably at least 17 or 18 minutes.

With regard to cooking the spaghetti squash, I always baked mine (takes at least 45 minutes). However, I was watching the Food Network last week and they had a special on called "The Low Carb Revolution". They had a chef on the show whose family lost over 500 pounds on a low carb diet. It was amazing. Anyway, he boiled the spaghetti squash. He cut it in half (length wise, of course), scooped out the seeds and put both halves in a large pot of boiling water (with a little salt) -- just like making pasta. Anyway, he said to let it boil about 20 minutes (I boiled mine for 30 minutes) and it came out perfectly!!

I think the hardest part about making spaghetti squash is cutting the darned thing in half - it is really hard. Even my husband had trouble cutting it.
 
Well y'all have convinced me to try it!
Good thing our local grocery store sells them already cut in half, sounds like that will make things alot easier!
 
The most recent time I made spaghetti squash, my shoulder was killing me and no way could I cut it. So, I stabbed it a few times, and stuck the whole thing in the microwave for a few minutes. It softened it up enough to cut it easier. I held my breath that it wouldn't explode :teeth: , but I think the stab holes made it OK!:crazy:

I have microwaved it with cut side down, a little water, and plastic wrap covering it. But, I like the idea of boiling it...I'll try that the next time!
 
My little sticker on it actually said you could cut it in half and cook in oven or pierce with fork and microwave it
so I stabbed it a bunch of times with a meat fork and nuked it
It was delicious.
It's what's for dinner tomorrow w/meatsauce.
I'm looking forward to it.
 
We just had spaghetti squash last night. I always do mine in the microwave. I (or my husband) cut it lengthwise and scoop seeds. I place them face (cut side) down in a covered casserole with a little water in the bottom (if it's small, both fit...if big, do one at a time). In my microwave it takes about 8 minutes for a small squash.

I agree that it doesn't taste like spaghetti, and if you undercook it it's a little too crunchy. I think it has a similar texture to spaghetti, but tastes more like summer squash. For me it's all about the sauce too. Last night I made a primavera sauce and it was great. When I was on Atkins last year I used to make this great cheesy, garlicky, alfredo type sauce. Now that was yummy.
