This would be one the actvities in the hotel. There would be a Hogwarts themed escape room. You would have to make reservations for it like any escape room.
I would do a mix to make it more like Hogwarts. At the start of the fall term you have returning students who know what thier house is and other people who need to be sorted. Guests can request a house in advance or ask to be "sorted" on arrival.
It would of course have actors playing all the roles. So a Severus Snape, McGonngeal, Hagrid, Gilderoy Lockahrdt etc.
I guess the question would be though if there should be a Harry Potter actor, Ron and Hermione? Or would that distract from the guests imagining that they are Harry Potter.

Anything HP related sells and so a hotel would be a wonderful addition to the attractions that already exist.
Having done a big search on Google I can't find anything that suggests JKR rejected the idea of a HP/Wizarding World hotel, but if UO did decide to build one it would be their first fully themed/immersive hotel.
However, JKR's main earnings now come from The Wizarding World, so maybe it has something to do with the cost effectiveness of building one.
Also, I don't think that a HP Hotel that charged astronomical prices, like Disney's space cruiser, would not go down well at all & I cannot see Universal wanting to create something for top earners either, they'll want to appeal to as many people as they could, so the prices should be the same as the current deluxe hotels.
The idea of including Ilvermorny makes more sense to me than including the schools in Goblet of Fire. What if the hotel has a backstory; something like for the first time, Hogwarts is running an exchange program/allowing visitors from Ilvermorny to stay at Hogwarts. If you don't have a house/don't want to be sorted, you could stay with Ilvermorny students.
With Hogwarts already in the park the hotel would have to be based on something else. Universal have been very careful to keep attractions at a distance, therefore I would imagine any HP/Wizarding World hotel would be something brand new for the parks.
I had also heard the JK rejected the idea for an onsite hotel, but who knows, if Starcruiser proves this is a way to make a ton of money, Universal might try to propose an idea she would find agreeable.
