I saw that DVC and Interval created a standard point/unit exchange system (e.g. 207 pts. for a two-bedroom in low season, etc.) What I have not been able to find is a breadown of the specific dates included in low, mid and high seasons. Although I would not be surprised if the dates vary from destination to destination, I'm hopeful that someone might have an idea of where I might find some guidance.

The only way that I know of is to call MS...

As you said, it varies from destination to destination... The snowy months would be primetime at a Ski resort, but would might not be high volume months at a resort in New England or in the Great Lakes...
 
It may even vary from one resort to another. You can get an idea from the Interval site at Inteval Internationals Resort Directory . From an II standpoint I think one can assume any time that is not red will be the LOW season for the DVC-II exchanges. After that it should be the very high demand times that are HIGH season, like Caribbean or MX Xmas through April. For a specific request you will indeed need to call or email DVC MS.

One other option you could use to get an idea is prices and seasons for individual resorts. Man resorts or systems have a website where you can find the information on what they consider the HIGH season for their resorts. This info can be found at places like Marriott's Resort Pages where you could select a resort, then "about the resort" then "seasons". Or at La Cabana in Aruba where they list prices and seasons on their website. Or you could go to places like Bluegreen's website and select a specific resort then the points options to compare. RCI's directory. and so on, you can or should be able to find out the higher and lower times for most anywhere if you want.
