Without Park Hopper... what are my options?

So I'm in favor of PH for our upcoming trip in November. HS is a 1/2 day park for us and I can see us possibly having dinner at an Epcot restaurant after a MK day. So in my mind PH makes sense. DH is not wanting to get it.

If we don't get PH prior to our trip and we are there an decide to go to HS in the afternoon following a MK morning, what are our options? Can we buy PH while at WDW? If so, is the price higher than advance purchase?

You can add it at any time while you're already there. The price is the same whether you add it today, or on your last day there.

I sometimes have traveled with folks who don't have hoppers - it all works just fine. We plan our park days in advance anyway - and we do tend to have a shorter day or two mixed in - if it's a week long trip. On a shorter park day - we might plan pool time, Disney Springs, or a meal at a different resort - and that fills out the day nicely.

If you are doing a short trip and don't plan on many trips - then maybe you need to FILL your days to the max - and hoppers make sense. But since you already know HS is a half-day park for you - that means you don't plan on doing every attraction - so you've been before!

AK's a half day park as well. Without park hoppers, you lose your flexibility.

We dont do park hoppers any more. Haven't for 6 years or so.

For HS, arrive at Rope Drop, and do Rock-n-Rollercoaster 1st thing on stand by. The go do Stunt SHow, Indiana Jones, Muppets, Mermaid Show, Beuty and the Beast Show. Leave around 1pm and head back to your resort for lunch and a nice afternoon swim.

Head back to the studios around 5pm and use FP+ for Tower of Terror, Toy Story, Start Tours. Byt this time it wil be 8:00pm. Go see Fantasmic, and end your day.
