Can only pick one and hear great things about both. With bread service included I am leaning towards Saana. This is my birthday dinner so my choice :) I love to try new foods and this is my first DW trip. I love bread, cheese, lamb and chocolate if that helps.

Oh dear what a dilemma! I love both these restaurants.
Boma is an all you can eat buffet with an African theme. It is a good way to try new foods and there will be many familiar foods too. It can get busy and you help yourself to the food. A server will bring your drinks. We stayed at AKL and ate quite a few meals in Boma (including breakfast) and twice at Sanaa.
Sanaa is a more traditional table service where you choose from a menu. I've always found the servers very helpful, explaining the African/Indian dishes. It has a lovely atmosphere and you may be fortunate and get a window seat and view of the animals, particularly if you book for 5pm when they open. Check in early and request a table at the window! It's worked for us a couple of times!
In both Boma and Sanaa the food is excellent.

I agree, they are both excellent. Boma is a better value on the DDP because it is expensive. It is a bit chaotic there but if you won't mind noise and hustle and bustle you'll love the variety and atmosophere of AKL. ( the butternut squash soup and zebra domes are worth the price themselves) Saana is quiter, more "elegant; casual" and the bread service is outstanding (better than Jiko dare I say). Sorry I wasn't really much help. They are two of the better Disney restaurants imo.

My vote would be Boma. Have dined there about 10 times over 5 trips since 2008 and always love it. Buffet with huge selection and both savory and sweet selections unique to Boma.

Tried Sanna last year and was fine, but didn't feel the value matched Boma. For one, you select entree, drink and desert from menu (bread service would be out of pocket since appetizers not on dining plan if you are). So amount of food is adequate but much more limited if you like to explore. And while indoor theme is nice at both, I was disappointed that after sunset you can't see out the windows so that kinda killed one reason for going to Sanna.

For a first, I'd recommend Boma.
