The California Grill lets you go out on the observation deck. You need reservations to get up there, though.
The Polynesian is said to have a nice view from the beach. The Wishes music is played, at both places.
Was at CG once, with window seats and stayed right there. It was very nice.
Another time, seated on the far side of the restaurant, so we went to the obersevation deck.
Your best bet for a window seat is to have a party of two and ask for MK window view seating, when you make the reservation. They won't promise it, but it doesn't hurt to have that information, on file.
Other than that, you can eat at the Roaring Fork at WL and take the 9:30 boat to MK. The boat will stop and dim its lights on the water, while the Wishes program goes on. Then go for a cruise back to WL, or get off and take a monorail ride to the parking lot.
This might work from GF, but I don't know the boat timing.

On a recent trip we watched Wishes from the beach at the Poly. It was really beautiful and relaxing and beat trying to get out of the MK with the crowds right after the show. However, the music was not piped in on the part of the beach we were sitting at. I'm not sure if it was playing on a different part or not. I've heard that sometimes it's played and sometimes it isn't, so if the music is essential to you then I wouldn't risk watching from the Poly.

Have a wonderful trip! :)

to watch from beach @ poly do you have to stay there?

No, you don't have to be staying there. We weren't staying there while we watched Wishes, but to be courteous to the guests who were staying there we just sat on the beach and not on the chairs or hammocks they have. We had an ADR at 'Ohana about 15 minutes after the fireworks were over. It worked out really nicely and if you like either 'Ohana or Kona Cafe for dinner then I would definitely recommend it. :thumbsup2

We watched Wishes from 'OHana at the Poly in October. It was beautiful, but they did not pipe the music in. We had a 7:40 ADR but were not seated until about 8:20, which made seeing Wishes possible.
I think it is late to expect to get an ADR for 8 at this point. If you want to, call ASAP.
