Shopping:
Wal-Mart is only a 2 minute drive north from GKTW. They have an entire section for WDW souvenirs, shirts, stuffed animals, cups, you name it. The prices are WAY lower than in the parks. Still there is something to be said for a kid picking up a souvenir AT each park. I would not buy things to take home to friends and family there or things for yourself, as WM is so much cheaper.
The Flea Market- East on the highway from Wal-Mart 1/4 mile or so and on the north side of the highway. It has lots of theme park souvenirs for a very low price. You may end up with things that are marked Disney Florida instead of WDW.
The Airport- Seriously, there are some great theme parks stores at the Orlando airport to pick up last minute (or first minute) things.
The Pirate-themed store outside Pirates of the Caribbean at MK.
The African clothing stores in AK
The Star Wars store outside Star Tours in Disney Studios
The store at Men in Black in Universal
The store at the waterfront in Sea World.
The kiosks at I.O.A.
The on-line store at GKTW, ask at the house of hearts for a discount code.
And now.... drum roll...... my top favorites over all!

E.T., Splash Mountain, Cat in the Hat
Rides for teens:
Everest, Tower of Terror, Test Track

Beaut and the Beast, Turtle Talk and Monster's Inc.

Character Greets for young kids: The Princesses for girls, Spiderman for boys and all of the characters who visit GKTW (there is something special about having the characters come to visit you, as a kid, on your turf instead of the other way around
Character Greets for teens: Captain Jack Sparrow
Dining: The Castle for girls and Mel's Drive In for boys
Shopping: Wal-Mart
Any one else care to make recommendations?
