Some people have teeth pulled and are up about that day with no problems ever.
Some people get knocked on their butt for a couple days and lie around swallowing Percocets and cursing God for giving them bad wisdom teeth.
I'm sure that if you talk to the oral surgeon and tell him you need to get on a plane on a certain day that he'll schedule you in well before that. I had the very same thing happen to me and they got me right in.

Take care to stay hydrated on your trip and if you are on any pain meds, make sure you follow precautions on the bottle about driving, etc.. Best of Luck to you! I'm sure you will do fine, there are all varrying types of wisdom teeth extractions some are a bit more involved than others but some are super easy too! Please post and let us know how you do! 
I have never had any dental work done before (lucky, I know). So my question is do you think there are rides I won't be able to do while I am at WDW? Thanks!
