On how much of the W&D course is this noticeable?
Pretty much every roadway and sidewalk down here is cambered - it's the only way to deal with our torrential summer rains. So for folks from other places, it's probably noticeable the entire course. It's every running day of my life, so I deal with it a few ways: I alternate sides of the road/sidewalk frequently so one side of me isn't taking all of the brunt of it, I run down the center "hump" of the road in races, often the far outside or far inside shoulders are a bit less pronounced. The worst of it in the W&D course, IMO, is the cloverleaf ramp heading into DHS.
The bridge on the boardwalk is probably the steepest and it's short and near the end so adrenaline will get you over it.
ITA - that stupid little bridge that I've walked and run a bunch of times outside of races looked 20 times bigger at the end of W&D lol!
Speaking of which, what have the temps been like for Wine & Dine the past few years?
I've only run W&D once - last year when it rained the whole time and dropped from a start temp in the high-60s to a finish temp in the mid-50s. But as a central Floridian I can say that early Nov. is the start of when our weather can go either way: could be hot and humid, though nowhere near like August, or a cold front could come through like last year and drop temps quite a bit. We really won't know until we're a few days out.
My ideal temperature to run a race is mid 40's to low 50's, but people from Florida will likely disagree with me on that.

I totally agree with this. I just wanted to stress that I think Disney races are more important than other races to try to make sure you are in the best corral for your running speed if you are wishing to run for time.
If someone has never run a Disney race before, they may be surprised at how things can slow down at certain points in the race due to park specific obstacles. But the parks, characters, and after party is what makes this race my favorite race.
