I would suggest that you get on allears.net and go to the WDW dining section. It has lists of all the restaurants with the menus and prices. You can see what the food options are like at the counter service as opposed to table service and see whsat might be interesting to you.
Also, you say you aren't planning on getting tickets and going into the parks? I just want to be sure since you have never been to WDW before that you know that WDW isn't just about rides and it isn't a park like a Six Flags. There are so many things for all ages to enjoy. There are lots of shows and things to see that don't involve rides. You might want to think about renting an ECV for the week and joining your family. My MIL can't do a whole lot of walking at WDW due to her health/injury issues. She rented an ECV and kept up with the rest of us (well, we actually were having to keep up with her) and had a wonderful time. Just something you might want to think about.
