Will swap Disneyland dining recommendations for WDW suggestions

We are west coasters and LOVE Disneyland. I am finding myself out of my element by going to WDW for the first time next May. Any suggestions would be greatly appreciated. We are a bit of "foodies" so anything that is a MUST DO would be awesome. If you have been to Disneyland, we are looking for places like Carthay Circle or Catal. Actually, even amazing can't miss places like the mint juleps and beignets or the amazing corn dogs at corn dog castle. TIA. We will be visiting all 4 parks so the more suggestions the merrier!!
 
We were recently at Disneyland and ate at both Carthay Circle and Catal.... both delicious. Base on this, I would suggest trying...

The Hollywood Brown Derby in Hollywood Studios (similar to Carthay Circle)
The Wave at The Contemporary Resort - a short walk from Magic Kingdom (fresh, seasonal foods and consistently good)
Sanaa at The Animal Kingdom Lodge - easy to get to from Animal Kingdom (Indian/African flavors, not like anything at Disneyland but definitely worth a visit)

For non-restaurant experiences, try La Cava in the Mexico Pavilion at EPCOT. It's a tequila bar with wide selection of tequilas and a large specialty margarita menu with a small snack menu.

There are many more great places to eat, but these are some of our "must-do" places every trip.
