Will stores be open during evening Extra Magic Hours?

Hello, everyone! I have looked over the list of attractions that will be open during Extra Magic Hours, but I can't find any information on whether or not stores and food kiosks/counters will be open during evening early magic hours.

If I were to go to Epcot for the evening extra magic hours from 9:00pm - midnight, will the stores in Japan be open even though there are no attractions open in Japan?

Will soda, popcorn, counter service, etc. be available in the areas that do have open attractions?

Also, if stores do remain open, what time will they close? I've read that stores stay open for about an hour after the park closes. Does this mean that I can shop for one more hour after the extra magic hours? In other words, if Epcot closes at 9:00pm to the general public and the extra magic hours closing time is midnight, can I shop to 1:00am? I know, 1:00am is ridiculously late, but I have a ridiculous love of shopping

Last time I was at epcot late the store in Japan was not open; however, the little shop in the Australia section was, and there's no attraction there either per se. This was at a slow time of year, so my GUESS would be it kind of varies by available staff and crowds.

That would be a "No."

There are places open for shopping during EMH, but not all (don't know about Japan).
There are places to buy snacks and drinks during EMH.

Even the stores that normally stay open late after regular closing will be closed at the end of PM EMH.
