I have been staying at WL since 2001 and having come off the back of several trips to DxL we certainly noticed a lack of options at Roaring Fork. But, in saying that we realised this before we booked, and since going to WL we almost certainly would not consider staying elsewhere.
I can understand those who say that being a Deluxe, dining is more weighted in favour of table service restaurants, but the fact remains there are only 2 table service restaurants: Of these WC can be very difficult to walk-in to and also has food options which my family I don't care for, and Artist Point only serves dinner (and is hardly a restaurant one would visit every other day for their evening meal).
It's about time that Disney started Artist Point doing breakfasts again, don't you think? What happened to breakfast with Pooh?? (It wasn't there when I started going in 2001).
