<font color=navy>I'd say that if you've already been to MT, then try Wild Bills. I've done both with my children, and though they are both quite entertaining shows, they are quite different. At Wild Bills, you sit at long tables, and intermingle with the other guests. Throughout the show, you are treated to different acts, and the food is brought out with a lot of fanfare. It's a lot more informal, and the food is served in the middle for everyone. Two people are chosen to be the servers who'll dole out the servings. My dd was chosen, and such a fuss was made over her by the other people at our table. She was 8 at the time, and loved it. My son was 9 at the time, and he also really enjoyed the show. When we went they had western singing and dancing, Native American dances, a rope girl (she was really good), and gauchos from Argentina (also very good). It's all you can eat, and a lot of audience participation with the clapping and all.
If that doesn't sound like something you'd like, then go for Medieval Times - always a good show there.
