Who's baking and whatcha making?

This was my weekend to bake-i made an apple crisp for hubby and i-we had a half bushel of apples from a farmers market that needed used.
the 15th or the week closest too it is when i do my boxes for my boys in the sand-because of my job and hubbies i ALWAYS have friends or family deployed-this month is Halloween themed boxes so i baked
Almond sugar cookies-bats, cats pumpkins and ghosts
chocolate chocolate chip cookies
pecan coconut cookies.
Just finished packing the boxes so i can send them off :)
 
I made a WW apple crisp yesterday and an apple pie. Still have lots of apples left from apple picking a couple of weeks ago:)
 

Last week I made an apple pie, banana bread and Texas brownies. This week I'm working on a recipe for cardamon-almond danish. The first batch was good, but the pastry wasn't flaky enough.
 
I run a cake decorating business out of my home so I'm always baking! Just finished this one, and now working on two batches of cupcakes.

My request is a little off topic but can you please share with my your tips for packing boxes to mail with homemade baked goods as I will be needing all the tips I can get on this in the soon coming future.

I made egg-free pumpkin cookies for my preschool kids today. I have two in one class with egg allergies.

They came out pretty good...kind of cake-y, but fairly tasty. The kids gobbled them up (all but one kid...and he was one with the allergy :rolleyes1)

First off what you send is as important as how you pack them-crisp cookies-not soft or chewy ones mail better. If you have a vacuum sealer then you can do the softer things-otherwise they tend to mold in the heat. anything with chocolate or a lot of peanut butter is not great in the hotter months-but work well in the winter. In the winter i have sent fudge and other softer things also.
I always ship in the APO-FPO flat rate boxes ( you can get these for free at the post office). the are less expensive to send-and-they are a uniform size and get there more quickly-as an example-i recently sent two boxes to a friend at COB Basra in iraq-one in an APO flat rate -one in a slighly larger priority mail box-the flat rate box reached him in 8 days-the other took nearly a month.
I pack things in the medium sized rectangular Ziploc containers-this prevents them from getting crushed in transit. if you have a vaccum sealer seal the stuff in packages that can be layered in those containers-fill the containers-tape them shut-two will fit in the larger flate rate box and leave room for other things in the box-or you can pack two containers and then layer other vaccuum sealed items with them.
Tina may have other input-she has also sent a few hundred boxes over there over time.
important to remember that stuff will be intransity for anywhere from 10 days to two weeks or more.
 
I got a recipe for pumpkin cinnamon rolls that I plan on trying out sometime this week, and a blue cheese - apple - walnut tart.
 
Here's my pumpkin muffin recipe. I just didn't use the cream cheese filling in this batch.

Pumpkin Cream Cheese Loaf or Muffins

1 cup canned pumpkin
1 cup plus 2 Tbsp. granulated sugar, divided
1/2 cup packed brown sugar
4 egg whites, divided
1/2 cup fat-free milk
1/4 cup canola oil 2 cups flour
2-1/2 tsp. CALUMET Baking Powder
2 tsp. pumpkin pie spice
1/4 tsp. salt
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened



HEAT oven to 350ºF.

MIX pumpkin, 1 cup granulated sugar, brown sugar, 3 egg whites, milk and oil in large bowl. Add flour, baking powder, spice and salt; stir just until moistened. Beat Neufchatel cheese, remaining granulated sugar and remaining egg white with whisk until well blended.

SPOON half of pumpkin batter into greased 9x5-inch nonstick loaf pan; cover with layers of Neufchatel mixture and remaining pumpkin batter.

BAKE 1 hour to 1 hour 5 min. or until toothpick inserted in center comes out clean. Loosen bread from sides of pan; cool in pan 10 min. Remove bread from pan to wire rack; cool completely.


Instead of the loaves I use muffin tins. I put liners in the tin first. I do barely spoonful(teaspoon full) of pumpkin mixture and then just a small dollop of cream cheese mixture and then I top it with a scoop full of pumpkin.

I bake 16-20 mins and then let set on the cooling rack.
 
Today I'm making homemade English muffins, corn muffins, and probably chocolate chip cookies. I hope the english muffins come out good, it's the first time i'm making them.
 
Tina, do you have any recipes for your mini breakfast quiches? I'm on the lookout for ways to eat more eggs. They sound interesting. :)

I'm sorry I'm just now getting back to your question.

I make individual quiche in my muffin pans using biscuit dough as my base. I use whatever we have on hand. These past batch had mushrooms and green onion and diced turkey. I freeze them and we pop them in microwave for a defrost for a quick breakfast.

I can write out a recipe if you'd like.
 
Well this weekend we are doing our Halloween baking as next weekend will just be too hectic.

I bake a couple times a year and generally it is boxed stuff.
A couple weeks ago my partner and I baked a Lane Cake from scratch (with the Bourbon) and it was a lot of work. Saw the recipe in an article about "To Kill a Mockingbird" and it sounded good. Didn't have a double boiler so we improvised. Had to make the frosting twice as the first batch didn't set up well.
The cake is a hearty cake and I wasn't sure I liked it at first but it really grew on me.

Ribbon Pumpkin Bread

Batter:
1 cup pumpkin
1/2 cup unsweetened applesauce
1 egg
1 egg white
1 tbsp canola oil
1-2/3 cups all purpose flour
1-1/4 cups sugar
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/3 cup walnuts (I didn't use these)

Filling:
6 oz. reduced fat cream cheese
1/4 cup sugar
1 tbsp all purpose flour
2 egg whites

1. For filling, combine the cream cheese, sugar, flour, and egg whites in a bowl; set aside. In a mixing bowl, beat the pumpkin, applesauce, egg, egg whites, and oil. Combine the flour, sugar, baking soda, salt, cinnamon, and cloves; add to the pumpkin mixture. Stir in walnuts.

2. Divide half of the batter between two 8-in. x 4-in. x 2-in. loaf pans coated with cooking spray. Spread each with filling; top with remaining batter.

3. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Refrigerate leftovers.

We picked about 40 pounds of apples last weekend. Between needing to use the apples and being in a cooking mode, I've spent the past two weekends making the following:

2 apple pies
homemade unsweetened applesauce
brownies
crockpot oatmeal (made with steel cut oats, raisins, apples & vanilla & cinnamon)
mexicali chicken
fiber one oven-fried chicken
butternut squash/apple soup

That's all I can think of right now. This week's project is pumpkin chocolate chip cookies for a party Saturday, another event Saturday night, and for the marching band at their parade on Sunday. Next week, I'll be doing Nightmare Before Christmas cupcakes and Mickey mummy cupcakes. Should be fun!
