who has some great low-carb appetizer /dessert recipes?

looking for lo-carb diabetic friendly appetizer /dessert ( or any party recipes).
family reunion coming up & I wanna wow them with food several can actually EAT!!!

you guys are so good I am sure you have something that will fit!

yes I know there are some low-carb sites, but I want some tried & true TASTY recipes/ & any diabetics out there 'know' those darn books that have recipes that are supposed to be GOOD for diabetics. well they usually are not!

pasta stuff would be okk, as there is a great low-carb pasta out there.
things with cream cheese/ cool whip/ whipping cream/butter/ eggs/ berries/veggies/ cheese are all great. just not great to have
breads/crackers /flour etc (unless the majority is low-carb.)
 
well i asked for a desert idea on here a little bit ago, and was recommended a cheesecake.
I don't personally like cheesecake, but my manager thought it was amazing and loved it. So much for being low carb.... She ate like 14 servings in two days (2 carbs a serving)....

I made mine without the crust. But plenty of people had ideas on the crust.
I used 3 blocks of philly cream cheese
1/2 cup of daisy light sour cream
1.5 cups of splenda
3 egg whites/1 egg
1 Tbs of vanilla
pre heat the oven to 400, then turn it down to 200 when you place it in and bake for 60-90mins. The website i used also suggested a water bath or using oven stones to maintain the higher temps longer. I didn't do either, and turned out ok. But it did crack like crazy on top.
I bought two containers of strawberries and sliced them in half. And left them on the side to be added.


I searched several sites and found the basis to the recipe and tweaked it my way. But i followed the general instruction from the about.com - low carb cheesecake site. I'm on my phone so i can't post a link for ya.
But it should come up with a google search, just look for the one posted on the about.com site.

Isn't italy (at epcot) the one that has all the yummy cheesy pastries/appetizers?? I'd search the web for disney recipes, and then find a low carb alternative to any high carb ingrediant.
 
My DH make these awesome jalapeno poppers. Slice and seed the jalapenos, fill with a mixture of cream cheese and cheddar, wrap each one with 1/2 a piece of bacon, and bake. We've also done a good stuffed mushroom, with spinach, bacon, and feta.
 
The Wish boards have a recipe section, and that is my go to place for recipes. The broccoli salad recipe is great, so is Beachgirls cheesecake!
 

Make (or buy) an Angel Food Cake

2lbs strawberries

Large tub of fat free cool whip

Tear angel food cake into bite size pieces

De-stem and cut up strawberries

Layer in trifle bowl -layer of cake, layer of strawberries, layer of cool whip.

Its always a hit whenever I make it. People practically lick the bowl clean. You can also use other fruit. I've done with using both blueberries and strawberries together. If you're feeling really creative you can slice the strawberries really thin and place around the sides of the bowl and on top.

Also, if its a really big crowd I have a large bowl and I double the recipe.
 
My DH make these awesome jalapeno poppers. Slice and seed the jalapenos, fill with a mixture of cream cheese and cheddar, wrap each one with 1/2 a piece of bacon, and bake. We've also done a good stuffed mushroom, with spinach, bacon, and feta.

...wow, THAT sounds good!
 
...you could fill tall parfait glasses with layers of sugar-free strawberry jello and sugar-free strawberry jello mixed with sugar-free Kool Whip (or S.F. whipped cream); top with a fresh strawberry slice - it looks so pretty and it's so refreshing!

It's basically spinach and garlic sauteed in a little olive oil. Then you add in a little heavy cream and parmesan cheese.

I also use the stuffing to stuff baked wontons.

Another easy one is: Feta, Grape Tomato, Cuke and Black Olive Kabobs. You basically put them all on a toothpick. Cube the feta, cut the grape tomatoes in half. Cut the cukes in little quarters and used sliced black olives. Layer them on the toothpicks on a pretty white platter and sprinkle with a little salt and pepper and olive oil. Very pretty and gets lots of oohs and aahs!

also having a hard time visualizing the kabobs.. how do you 'toothpick' a sliced black olive?
& you drizzle the olive oil over the platter? don't the suckers then drip as you are trying to neatly eat them?
 
Muffyn: They actually come out very pretty. I got them from Finecooking.com. You can probably see a picture on their website.

I usually put the feta on first, followed by half a grape tomato, black olive and cuke. I drizzle a little olive oil over the platter...not a lot ...so they are not dripping. Very nice presentation.

I've also seen toothpicks done with mozzarella balls wrapped in basil leaves and grape tomatoes.

PS. Just realized I said sliced black olive. They are actually whole. I was thinking sliced because I use a lot of them in salads and stuff. Sorry about that!
