I guess I'm not exactly sure what interactive games you're referring to. There are two games available in MK and Epcot, and just the one in AK.
First, AK, because it's easy: Wilderness Explorers. It's LOOONG. Like, unless you start at the beginning of the day and do nothing else all day, you likely won't get it done. We came home without all badgegs being earned/our books being full, which was fine. But it's really not something most people could complete in a day if they want to do anything else in the park, IMO.
MK: there is the pirate game (which we haven't played) and Sorcerer's of the Magic Kingdom. I'll defer to the others on the pirate game. SOMK was great fun, but again, not really something that can be completed in a day, as there are MANY cards to obtain (some which don't come free so have to be purchased or traded for) and many levels to complete.
Epcot: There's the Agent P game (again, which we didn't play) and also the Kidcot stations. My kids love coloring so loved the Kidcot stations. I think we maybe missed one in a full day at Epcot.
I don't think any of these games should be seen as a chore, but rather as a way to fill time in between rides. I think they're so long/detailed (other than the MK pirate game) specifically to be a time filler in all areas of the park. I would warn your kids not to feel like they have to complete each game, and tell them they're designed not to be completed in one day.
