Whitewater Snacks/other GF breakfast options before the parks open

My friend and I are making a quick one-day trip to Disneyland (I'm piggybacking off a work conference in LA), and staying at the Best Western Pavilions. Since we've got only one day, we'll obviously be making the most of it by being there, fed and caffeinated, in time for rope drop.

My friend has recently given up gluten because of a suspected intolerance, at the direction of her doctor. She's not incredibly sensitive, so cross-contamination/trace amounts isn't a huge concern. We've been really impressed with the wealth of information and options available. Our biggest challenge seems to be breakfast, as there isn't a ton open outside the parks before 8am. Our walk will take us by the resort hotels, and it looks like Whitewater Snacks might be our best bet. Can anyone tell me if the GF waffles there are made to order? And are they Mickey waffles? (Not that that's a huge deal, but it'd be a bonus).

If there is a better option in the resorts, DTD or otherwise on our walk in, I'm happy to hear it. I think we have dinners figured out, and tons of lunch options in the park- but breakfast is a bit more limited. The absolute worst-case scenario is that we just pack something, but that's not as fun as mickey waffles, lol.

Whitewater snacks is made to order. but is pretty limited so doubt they can make any normal items gluten free.

Mickey and Friends Surfs Up character breakfast in Paradise Pier Hotel is a buffet and made to order omelet bar. All of their items have a menu card that indicate if they are gluten free or not.

Also not sure what time they open, but another breakfast favorite of mine is Catal in DTD. They are a full service restaurant and could easily accommodate the gluten free request.

There's a gluten-free dining app that I downloaded that specified that they have GF waffles, so I am fairly confident that they exist. I'm just hopeful that they are decent, lol.

I think that if we are planning a long park day, it would probably be better for us to stick with quick-service breakfast if at all possible. Adding a 7am character breakfast to an 8am-12am park day is probably overkill :).
