It's very loud - the servers yell a lot of things, there's a stick pony race, there are some things that go on that involve people running around the restaurant (don't want to give away all the surprises), they usually have the restaurant singing happy birthday to people, etc. Believe me, it's usually loud.
It's equal parts entertainment and dinner - but it's not a show, like with a stage.
Another thing about WCC that contributes to the noise (in addition to servers being intentionally loud - and usually funny) is that WCC is open to the cavernous WL lobby. There are a lot of echoing sounds that go right into WCC. We love this place, though.
Biergarten in Germany is supposed to be like a Munich-style beer hall, and there is an oompah band show once an hour or so. The food is so-so, in my opinion, but we love the show and I like having a mug of beer there. Tables are long and narrow, so if you're party is 4 or fewer people, you can be expected to be seated with other people at the same table.
I'd recommend both WCC and Biergarten to a family with kids.
We were at Biergarten for our DD's 6th birthday, and they threw in a free miniature cake (we did not ask for this), and had the entire restaurant sing happy birthday to DD while the oompah band played it as well. We requested none of this, but they made it happen as though it had been planned for weeks.
WCC has a family style option on the menu, but only those who order it can eat from that meal. If you want more sausage or ribs, the server will bring more, for example. The rest of the menu is a la carte like any other restaurant. I thought the family style skillet was good, but I didn't eat the chicken, so I can't tell you if it was good or not.
Biergarten is a full buffet, and as others have stated, multiple parties are seated at a long table. I haven't eaten there in years, but I wasn't thrilled with it the last time I ate there.
You'll get conflicting opinions on most restaurants, so the best you can do is try these places and decide for yourself.
WCC was LOUD, I mean really LOUD. The food was eh, ok. DH really like the trout dish he ordered. My kids liked it because of the stick pony race. The servers are over the top, you'll see.
When someone says something is too loud- it usually means that they found the sounds to be noise. Noisy would be a better way to describe it. Lots of things/places are loud but when it comes out as a complaint it usually just means that someone does not enjoy it so therefore the sounds are now noise, instead of just sound.
Kids are loud. But so are grownups. But if someone doesn't really like to be around kids, then the loudness of the kids- whether or not it's louder than a bunch of adults, is now "noise" to someone who does not want to be around it
Whispering Canyon is a great place to go if you have kids. even if you don't have kids. the Skillet Dinner is very good with something for everyone. there are also other choices that are good as well. There are bottomless milkshakes with a huge number of flavors and you are persuaded to try them all if you like.
There is fun around every corner and the participation of the other tables and cast members makes it a real fun time. Be sure to let them know if you have a birthday or other special celebration.

We went to WCC 3 years ago, and I thought the food was excellent (Had the skillet) and I drank SOOO many milkshakes!! Everyone in our party (2 kids 9 and 11, 4 adults from 33 - 60) all enjoyed the food.
Biergarten...we are eating there this year for the first time when we go in 100 days!!
