I've heard all this stuff about when you are on-site you can get great rates, etc. for your next trip. Where do you find this stuff out? Also, when you are there are there any other special deals or attractions that you can do only because you are currently on site, but they're something you need to request?

One of the best and free things about staying onsite. Package delivery from the shops. Up until the day before you leave, you can have any package from the shops delivered back to your room so you don't have to lug them around. They will be delivered to your resort the next day (which is why you can't use it the day before you check out). We've done this many, many times and miss it when we stay offsite. You can even do this with any photos you buy after the rides.
