Which reward card for our situation?

We have a Disney Visa card and have a nice amount of rewards on that for a future trip but we are now moving away to travelling to Disney as much and travelling abroad more (specifically Ireland and Western Europe). I am trying to figure out which card would be the best. I see that Capital One has no foreign transaction fees and no hassle rewards - would anyone recommend this card? Any other card you'd recommend? We would like one that isn't complicated with regards to redeeming the rewards and one that doesn't take forever to get the miles needed for redemption? We've had our Disney card so long I'm clueless to any others.
 
We have a Capital One Rewards card, but we only use our CC for gas for the cars...just to keep our FICO score up (no offense to Dave Ramsey, but I have an 845 and it keeps my car insurance rates and other things down).

Anyway, their reward system is very simple to log in and redeem. I can only speak to the gift cards, but we get 100 point for every $100 we spend. For every 500 points, you get a $5 GC. I always wait for 2500 or 5000 points and get a $25 or $50 GC. I think they have Delta GCs, but I usually use it for Target or Walmart.
 
Consumer Reports recently did an article on the best rewards cards. I can't find mine at the moment, but i'm sure you could track it down if you were interested.
 
OP-Check out a website called flyertalk.com It is sort of like the dis, but for business travelers. They have a constant discussion on cards that earn miles and the best offers to get them.

I would then figure out from your local area, which airline had the best flights to Europe and get a card associated with that airline. For me in Chicago, it is either United of American. Since I am able to maintain an American airlines card through Citibank with no annual fee (the account is old) I use that and generate tons of miles.
 

I have the capital one venture card and would highly recommend it. It does have a $60 annual fee but you get 2% back on all purchases. Redemptions are very easy and can be used for any expense that comes up as travel( hotels, rental cars, airfare). Money magazine recommended it.
