Which restaurants, including breakfast/lunch/dinner, and character meals are PS's a must for. I'm approaching 90 days and want to make sure I don't miss any of the musts for PS's (We plan on eating mostly sit-downs for all meals since we're on the Gold Plan). Thanks for all your help!

Unless you're going in off-season, which you're not, I'd suggest a PS for all your main meals. I even make them for meals like breakfast at the Kona Cafe. I wouldn't take any chances. :)

Another factor is the number of people in your party. We are a family of six so having PS for all meals is vital.

I agree--once youare fairly sure of where and when you want to eat, you should make PS. It IS better to be safe than sorry, and from time to time folks w/o PS have been turned away from some of the more popular spots.
So why take a chance?? And if your plans change, PS are easy to cancel.

if u would like to eat at cape may cafe for dinner you will need a ps. we went off season and at 5 they were turning away walkins and we had to wait 20 minutes

Another voice added for a PS for every special meal you want to have happen at a certain time, especially during busy times.
The consequence of not making a PS is that you are "stranded" without a place to eat when you're hungry and have to have a plan B ready. Its just a great convenience to know that you will be eating at a certain time so that all your other plans can fall into place as well.

We've been turned away from Teppanyaki, Sci Fi, 50s Prime Time and Whispering Canyon.

We've had better luck with Marrakesh and Artists Point.

We made a 3:00 call to get 5:00 pm reservations at Spoodles, nothing was available later than 5:00.

Character meals always require a PS. Some people get lucky, but you don't want to spend all your time running from character meal to character meal trying to get value from your Gold Plan looking for a place to eat.

In fact, since you are on the Gold Plan, I'd make PSs for every meal. You can call Disney Dining from your room or a cell phone and change them on the fly as your mood changes, but for me, a sure way to ruin a vacation would be to pay big bucks for the Gold plan and end up eating counter service burgers because nothing sit down was open when I was hungry.

we had a PS for boma for monday 1/26 for a party of two. this seems to be about as off-season as it is possible to be.

we were seated after only about 10 minutes but we overheard the hostess saying it was a 2 hour wait for a table.

we made PS for all dinners even in late january. but we walked into le cellier for lunch without a PS and the restaurant was deserted.

you don't have to make PS very far in advance, sometimes even the same day works out fine in the off season. last year we did a last minute trip to the World that we literally planned 24 hours in advance. we got PS after we arrived in florida, at least one was same day.

but since you're going in a higher season, why take the chance?

If the restaurant is important to you, make a PS. We never take a chance. As Uncle "R" stated, you can always cancel. :)
