We are heading to WDW in May and had plans to rent a mini-van for 8 people. The seating for 8 in a mini-van is not a problem but I think we will have trouble fitting all our luggage. So does anyone know which company rents large SUV's like a Surburan or Excursion?

I'm positive that Hertz in Orlando has very large SUV's. I have only rented from them once about 3 years ago but had a very positive experience with them!! 
I believe you are shuttled from airport to their facility but it was a smooth transition.
I DON'T remember seeing anything that large at National or Dollar (the two I ususally use while in town).
