Which parks would you choose?

So hubby and I are planning our second ever trip to Disney World for our 5th wedding anniversary, and we're so undecided on how many days to spend at each park! We'll be going for seven days total, and initially we decided 1 day Hollywood Studios, 1 day Epcot, 2 days Animal kingdom and 3 days Magic Kingdom (since it's my absolute favorite park).

However, we recently learned that Epcot's Festival of the Arts will be taking place when we're there, so now we're torn! Do we take one day away from Animal Kingdom and switch it over to Epcot? Or will one day be enough to soak in everything the festival has to offer? We did also consider taking away one one of the Magic Kingdom days, but that sure does make me sad!

I know it's SO dependent on personal taste, but like I said, this is only our second trip ever and we love ALL of it! We also probably won't be going back again for another few years, so every decision counts. Would love your opinions and suggestions :)
 
With the exception of the bird show, there are currently no shows at AK. So you really should be able to ride anything you want to ride and do the animal paths in the regular park hours. Since you said it made you sad to not have three days at MK, I vote for a three day plan.
 
Honestly, what I would do is book 3 MK, 2 EP, and 1 AK. Put EP toward the beginning of your trip and see how much you get done. For us right now EP is a one-day park between all the walls and the closures (the Food & Wine was underwhelming since it wasn't fully running yet when we went), but with the Arts festival you might find you need more time :). If you do find you do everything, then swap out your second EP day for another park

Keep in mind that you can also adjust your park reservations during the week if there's availability in the park you want to go to. Like you can plan 2 MK days, and then if you see everything on day one, change it to an Epcot day or something else. So far, DHS and MK are the parks that tend to book full the most often- AK and Epcot don't always fill up.
 

I really wanted to vote for the 2,2 and 2 option as I love AK as a park. But with the shows gone and love entertainment gone, it probably can be done in one day.
With so much closed at EPCOT, it was tempting to vote that as a 1 day park as well.

Do a weekend day at EPCOT if you want food booths; Taste of EPCOT currently closes several options on weekdays.

If at interested in HS, book a day now; the closer you get to your trip, the more likely it will be unavailable.
