Which Park / Which Days?

We have 7 nights reserved at POR in March. We are only planning to each park once, although we may visit MK a second day.

We arrive Friday afternoon, planning on a character dinner and maybe DD for a while.
That leaves Sat-Thurs for the parks. What parks are the most crowded on what days?
Or should I play it by ear and go with the weather? If the weather is unfavorable, we could head out to do other <gasp> non-Disney things.
