Which park to skip?

I'd skip AK. I love that park but I feel that EPCOT is a must and even at the age of your kids, they still might enjoy it.
I know I have loved it from the first time I visited (age 8) so that is a very long time of loving that Park. It all depends on what they enjoy though.
