I have done so much research on these two... my head is spinning. Looking at Caribe Royale or Embassy Suites LBV South. And these really are my only two choices since almost all of the other places I looked at have already booked. (going over Christmas)

It seems Embassy is nicer, and brand new. But Caribe is less expensive and closer to the parks. Love the breakfast at Embassy, although it may be easier just to have a quick cereal breakfast in our room.

Pool area is not a factor, I am thinking it will be too cold to swim.

I am leaning towards Embassy, but it sure would be nice to save $40 a night at the Caribe. Has anyone stayed at both? It seems like Caribe gets mixed reviews for cleanliness and being a little outdated?

Just got back from a stay at embassy suites LBV south after having it recommended to me from someone on the Dis. Great stay! The hotel is new-ish so everything was in great condition. We enjoyed the nightly cocktails and the morning breakfast---I have to eat dairy free right now for my little one so it was so nice to have a cooked to order option where I knew exactly what was in it. The only thing I wasn't that impressed with was the pool...it was pretty cold and not really any theming...just in a fenced in area off the parking lot.

The suite was just the right amount of space for me, DH and baby...but I'd want to go back to Bonnet Creek if my group was any larger.
 
Regarding location, the Embassy Suites is not much farther than Caribe Royal. I've stayed at the sister property, Buena Vista Suites and I'd say that the embassy and that hotel were pretty much in the same area.

Yes... I would love Bonnet Creek, but they are completely booked.

Can you comment on the evening reception? I am wondering if there are snacks for the kids or if it is just drinks?

The evening reception was carrot sticks, celery sticks, olives, crackers, ranch dressing, pretzels, tortilla chips and salsa. The veggies were a nice treat that we had not had at other Embassy Suites.

Distance wise they are extremely close, you drive to the Caribe intersection from Embassy to head on property, maybe an additional minute or two. Location would not be an issue in my decision.

Caribe was great, was there a week with 3 adult kids. The suite served us well and we were at the parks almost non-stop. We were also there at Christmas time and while they swam one night late, the pool was not an important part of decision. We were unaware of any activity happening and felt very removed from the main hub. I walked over while they swam and took a couple pictures of the tree. Seemed like a great place for meetings, reunion, weddings etc but there was no warm fuzzy on arrival, sharing of any information, etc. I don't know if that makes sense. Other than those 5 minutes at check-in we never saw any staff anywhere.

Embassy Suites LVB South had (two trips now) excellent service with a smile, everyone from front desk to bus guys were friendly and helpful. Loved the breakfast in the mornings being cooked and ready and it saved us money because we really didn't need but one more big meal each day. Both times we had great views of Downtown Disney and could watch the fireworks if we were back at hotel in time. The rooms being new and well done were nice to relax in.

$40 is alot of money to save, it just depends on what you are wanting from the resort and if the nice breakfast and evening drinks come in to play in your decision.

I think we just made our decision. Embassy. The reception looks like it will be right up our alley... chips and salsa and fresh veggies. Perfect.

And I know what you mean about not needing 2 more big meals after a breakfast like that. We did this at an Embassy in DC. It seems after such a filling breakfast, no one cared much about food the rest of the day.
