Which MNSSHP - our only Disney night

For our family honeymoon we are going to Orlando the third week of October. Two years ago we did the pure Disney vacation - and thanks to this board had the time of our lives!

This time, with kids 12, 10, and 9, we're focusing on US/IOA. HOWEVER, our one night at MK will be for MNSSHP.

Here are our choices:
Go Sunday, our first night in Orlando.
Go Wednesday, and break up our week a bit.
Go Friday, our last night in Orlando.

We really want to ride as many rides as many times as possible. Plus, I'd like to get into the park early and eat at LTT. So, which night would you choose?

I would go either Sunday or Wednesday...not Friday. Fridays are usually the busier night of the week.
