It really depends on what you’re looking for in terms of mini golf. Winter Summerland is more highly themed and more kid friendly. Fantasia Gardens is beautiful but a more adult type of course. But they’re both excellent for anyone.

currently Winter Summerland is open through the end of the month, Fantasia is closed. No info on next month's schedule.
With Blizzard Beach opening in March I would assume Winter Summerland will be the one that remains open for the time being

With or with out children Fantasia golf is a wonderful choice lots of interaction, beautiful Fantasia character pieces to excite the imagination. Some of the water effects are really one of a kind. My family loves it.
I love Fantasia. Just as a tip, I recommend going at night (if it's open). There are (usually) less people, you don't get hot standing in the direct sun, and the course is lit up really nicely, which makes the whole course seem extra magical.
Winter/Summerland is our family favorite. We've done both, but that's the one w/ the most Disney FUN. Doing it at night too when it's dark is exactly how we enjoy it. We usually do both sides, so 2 rounds.
