Which in park TS restaurants have day of or day before availability?

Good point, but MDE is making it more and more difficult not to have the smart phone. Before last trip, we always put our smart phones away while at WDW in order to stay in the bubble even more. I guess you'd have to call the dining 800 number for a last minute ADR instead of using mde.

Our 180 day for a short weekend trip in November is coming up sometime soon. Don't even really know exactly when it is, because I couldn't care less. I'll decide what I want to eat while I'm there at WDW, when I'm hungry. Like you, we've NEVER had any problem eating pretty much anywhere we wanted to since we stopped the mindless 180 day ADR grab, only to totally stress out when 60 days came along and Fastpasses interfered with half of them.

That only works if you are not picky about where you wish to dine nor when. Some TS's are very difficult to get day of. Places like Ohana's, The Wave, Coral Reef etc. are nearly impossible to get same day. We plan our dinners around Illuminations, Fireworks, Fantasmic, Parades etc. so we can be sure to eat before or after each and not miss anything on our trip. We have hoppers so we can easily visit 1 park during the day then head elsewhere for dinner so fast passes are less of an issue.
 
Nine Dragons and Biergarten are our favorite Epcot restaurants. Nice since we like “winging it” and can eat there without ADRs

No, they are not. I've found all of them same day. The Wave especially, we eat at every trip.
 

We actually stepped outside, made the ADR, went back inside, and I said to the same CM, "Hi we have a reservation at 5!" like I had never been there five minutes prior. :) lol! I was very polite, too. I'm sure they're just doing what they're told to do!

I've taken an MDE ADR literally right next to the podium in front of the hostess. I asked her beforehand "Do I really have to take the online reservation in order for you to seat us?". So, yeah. That is fun, isn't it??
 
Be sure to reserve an ADR through MDE even if you're in route to the restaurant/last minute. This will save you a possible headache of being turned away. (in our experience with some CMs who said no availability when in fact there were available ADRs at that very time)
That's fine. I know the process I've done it for last minute reservation while standing at the check in podium.

I was mostly asking because some days I'm going to let him just pick whatever park he wants to go to. I will be making a couple but he has no must dues unless they come up with a star wars TS restaurant before February.

Have you ever even tried it? We do not make ADR's more than one day in advance, mostly day of, and we've had no problem getting BoG or any of the other supposed "hard to get" ADR's. Heck, we turned down an 8am 'Ohana in November when we checked at 6:30am.

The Wave...hard to get? Seriously? It's never been more than half full any of the times I've been.

I was referring to dinners rather than breakfast. Every trip I'm always checking MDE app to see if I can change our ADR's to better suit our moods. Rarely does much come up. Early dinners at 5pm or late dinners at 9:30pm show up now and then. Sometimes thats ok but usually those times won't work for us. I've found that day of ADR's work if you can go to dinner any time and aren't picky as to where.

How many people in your party though? I think what you described is fairly easy for a party of 2, but much more difficult for a family of 5 or 6.

How many people in your party though? I think what you described is fairly easy for a party of 2, but much more difficult for a family of 5 or 6.

We do either lunch or dinner, never breakfast.
Are parties of 2, 3 or 4, depending on the trip.
And The Wave, as PP said, it's available all the time. I've never seen it not come up. Are you sure you aren't confusing it with something else? It's even available for dinners 100% of the time we look, for all hours of the day. They are even one of the rare ones that will sometimes accept walk ins. We no longer bother to try, we just book the ADR since they are always available but we have seen folks ask every trip. The Wave is a favorite of DHs (he loves their burger), so we eat there all the time.
 
When we lived in Central Florida (pre-smartphones) we generally walked into a park in the morning, read the board where they posted which restaurants had open reservations, and stopped into guest services to book a dinner or lunch. It's how we discovered many of our favorite places!

Of course, things are a bit different now, but you can still ask about dinner reservations at guest services when you walk into a park in the morning. A good option for those without smartphones! Make sure to ask about in-park as well as nearby resorts.
 
You should be able to find a table at many places the day of, however, it may be at an odd time. Certain places like Cinderella’s Royal Table and Akershus are pretty much impossible to book without plenty of advanced notice.

Always exceptions though - I just checked breakfast openings for today, and there’s a 10:35am spot at Akershush!

Right, and it's not an exception. People cancel at 24 hours every single day for every single restaurant. That's why it's rather easy to find openings.
