Doubletree and Fairfield, too, I think, were supposed to be upgrading all their beds to pillowtop. We stayed at a Doubletree in Ontario, Calif., and it was the most comfortable bed I've ever been in.
We have stayed at the CandyCane Inn three times in the last two years and their beds are excellent. Pillow tops and nice comforters. I think being dead tired from walking for 10-12 hours helps, but I slept better there than at home.
I will second the Candy Cane Inn's beds. We couldn't believe how comfortable they were and loved the duvets. The pillows were on the small side but I always bring my own anyway (thank heaven for Space Bags!).
Glad to hear the Carousel's beds mentioned....we are giving them a try in July.
