Which hotel is best for adult only? I just don't want to be trampled by screaming crying kids....I get enough of that at work

Going to a family theme park destination, screaming crying kids are a given. Since they are highly concentrated all over the place, you will not be able to fully get away from them.
However, that said, I will second the notion that the Portofino does seem to be the most adult oriented. That is where we always stay although we do have kids. Last trip we hauled 5 of them there, ours and nieces. According to your siggie, you stayed there in 2004 - did you see many kids at that time? What you experienced then would probably be the norm for the Portofino.
As others have mentioned, most kids will be at the Beach pool. Depending on the time of year, there will occasionally be some in the Villa pool because that is where the bocce ball court is located. Kids love to play bocce ball and then take a dip. But every time we have been there, there has been absolutely nobody at the hillside pool. I think most guests have no idea it even exists. It is on the opposite side of the harbor from the other pools and there is no restaurant or bar service really close by, so it is not very popular. But is it absolutely peaceful if that is what you want
Also, Trattoria has a tv and couches for the kids, so as a restaurant, it usually has a fair number of kids in it. You may want to check it out before you eat there.
FWIW, we will sometimes walk over to the Hard Rock pool just because the Portofino does have such a lack of kids.
We love Harbor Nights too. We did it last Thanksgiving weekend. Met lots of great locals and some celebrities; had a nice chat with Liv Tyler in the champagne line
