Which Hotel and other ?'s

I'm new to this board and was wondering a few things. Can you do universal in 2 days, possibly a long weekend? We never do Disney on a weekend b/c of crowds but with the head of the line thing it sounds pretty easy. Also which on-site hotel? We have a 3 1/2 year old, so the less walking the better?
 
All the hotels are wonderful. Which one you choose is up to what theme you prefer and if you are concerned with price. The RPR is the least expensive. PBH is the most expensive with HRH in the middle. RPR has a very relaxing South Pacific atmosphere. It is a short walk to IOA or you can always ride the water taxi and never walk if you chose. RPR has a great pool with an interactive water play area. HRH is all about rock-n-roll and it's louder with music always playing poolside (even under water). The HRH has a great water slide. PBH is set up like an Italian village and is quieter. It is the furthest away from the parks but again you can always ride the water taxi. You can also visit the other hotel pools while you are staying at any of the 3 resorts.
 
We've stayed at HRH and RP. We're staying at HRH next month since we like the hotel, the pool is great (you can pool hop, though), and it is very close to the parks. RP is nice, also.

I think that 3 days is ideal for the Universal parks, but you should be able to see most everything in 2 with the FOTL. We're staying 3 days (which is our minumum) because we like to repeat rides and we have 4 children from 4-16 years old so we do everything.
