Which Epcot FPs?

We are going in September....so relatively short lines for the most part. Our first evening will be at Epcot. We're going with my sister's family so there will be 7 of us. We are staying at BCR and will walk to Epcot for a Garden Grill ADR at 7 pm. We don't want to go to Epcot much before 5 because we want to swim first.

The only FP I know we definitely want the first evening is Soarin. What other 2 FPs would you do, in Future World, that evening? We always walk straight onto Nemo so it seems very weird to do a FP for it. Maybe Spaceship Earth? I won't have time for many other FPs because we're getting there at 5 and eating at 7. I just want to make sure I get the Soarin FP.

What happens if I schedule a 3 or 4 pm FP but don't even get to the park by then. The Soarin FP will be fine, right? Thanks!
 
Maybe Spaceship Earth and Living with the Land? I would just pick whatever of the lesser attractions is a must do for your family. Just watching the lines app it seems like the wait times can fluctuate a lot for the lesser Epcot stuff. One nice thing about FP+ is it is easy to reschedule if you miss your window or simply want to choose standby (for the lower priority rides that is). We were at Epcot last week on a recommended day and constantly moved our FP+ around for the lesser attractions. If we got there and the wait was small then we simply moved it till later in the day. I think we only ended up using 2 of our fast pass slots. Supposedly even things like the Figment ride can get a big line now. That is my DD's favorite ride and the one we hit at rope drop. I thought it was funny that the CM asked us going in if we had a fast pass. We were literally the only ones on our tram!
