Adding a non park day to the end of our stay, which deluxe would you do for the one night and why?

Animal Kingdom Lodge hands down. Three different excellent restaurants and four savannas to see. There are lots of good resorts but I don't think any single resort has as much to see or do as AKL.

Either Polynesian - you could do a monorail resort hop and check out all the christmas decorations, see the fireworks from the beach at night
Beach Club - you can check out all the lobby christmas decorations at the BC, YC, Boardwalk and also Swan and Dolphin and Beach Club has the movies on the beach at night, you can rent a surrey bike for your family at the Boardwalk and ride around and you can also check out the Boardwalk area and shops. You can see some of the Epcot fireworks also, best view is by the boat dock at YC I think. You can also just take a ride on the friendships too if you want.

Non park day deluxe - why not stay club level...
AKL - if you want to relax around a resort and feel like you are in another place other than Disney. Relaxed setting and pool with the ability to see animals at specific places at various times of the day.
BWI - if you want a relaxed resort with little outside guest since all of the TS restaurants are located on the Boardwalk.
BC/YC - if you want an active feel with a flagship pool with lots of non-resort guest taking advantage of the resorts TS offerings
PR - Polynesian feel with partial iconic views (bungalows now block) with lots of people surging resort to see it and dine at Ohana and Kona
GF - people are polarized about this resort as it is the flagship of the deluxe. Some guest over dress but who cares. Its your vacation and the pools are pretty large
CR - the architecture is the theme and if the out of place tower neighbor doesn't bother you...select the tower with a magic Kingdom view club

If you're doing that day as a non-park day...........I'd go with Beach Club/Yacht Club.............the best pool of any of the deluxe on property.

What benefits are there to staying club level?

Animal Kingdom. The only drawback to staying in this resort is the non-adjacency to parks that other deluxes have. Since you're not doing parks that day, this one wins by a landslide. It's a perfect one night stand.

Is the weather decent enough to be in the pools late December/early January?

Boardwalk, no doubt.
Great atmosphere right on the water, boardwalk performers at night, great views of Epcot and YC/BC, walking distance to about half a dozen great restaurants, Jellyrolls, Big River Brewing...

I'm sure it varies but we have been the first week of January 3x now and the weather in the day was in the low-mid 80s, and at night a nice 70s. We were able to swim in the day of course, and at night as well though a bit chillier, nothing too bad.

In this order:

Animal Kingdom Lodge: the theme, the Savannahs, and eating at my second favorite resort restaurant: Boma
Polynesian: the theme, and eating at my favorite resort restaurant: Ohana
Wilderness Lodge: the theme, and my favorite expensive resort restaurant to eat at (loved the whole experience and food): Artist Point

They are all beautiful resorts with plenty of places to explore.

If anyone asks me an open-ended question regarding the deluxe resorts, my answer will always be the same--the Polynesian. Love, love, love the theming and the relaxed vibe--being just a monorail ride to MK and EP doesn't hurt either. I just wish I could stay there more often--if it wasn't so darn $$$$$$:(. However, I'm hoping to have saved enough pennies by then to be able to finally stay there again, after all these years, in December of 2016.

Stay BC/YC Club Level , perferably BC as their club was just upgraded. Their is a Breakfast served in the morning , snacks ( mostly chips and dip, swedish fish and a trail mix ) and pop through out the day, around 5 pm they put out hot apps , and beer and wine is served ( but you can ask at any point in the day for a beer or glass of wine, i believe FL law is 2 per person ) then around 7 - 10 pm desserts and liqours. If you can hold your own or have some kids to feed this upgrade pays for it self. Then for during the day the BC/YC has I believe like 3 acres of water play area, with a sand bottom. ( Only one on property , I believe. ) That and at night the Boardwalk has some free entertainment and carnival style games, and several places to eat.

Good morning. I would stay on the monorail loop (GF, Contemporary or Poly). This way you can explore the monorail resorts. You can also take a boat to the WL and campgrounds. We stayed 10 nights Club Level at The Contempoary June 2014. They have a light continental breakfast in the morning, snacks in the afternoon, light appetizers in the early evening and desserts and drinks at night. We enjoyed watching the fireworks from the lounge balconies. It is a great view.
