I would highly recommend Sting Ray Sailing or their sister company Cayman Eco Adventures. We've been on two excursions with both companies. Knowledgeable crew, safety is their primary concern, great shoreside communication, they directly monitor the Disney ships so you don't have to worry about timelines or missing any tenders. Small almost private charters. Amazing trips both times, awesome snorkeling as well. Enjoy!
