In Epcot you can get a "passport" in Italy, France, or Germany for about $20 it lets you sample 2 wines at all three countries.
Do things that the kids would find boring like touring the different country pavilions. Did you know that the China pavilion features a movie which features things no other western film crew has been allowed to shoot, or that King Hassan II of Morocco actually sent out moroccan artists to build it, there is a lot of really interesting stuff to explore that kids usually aren't interested in. Also going on rides like Living with the land, which gives a lot of interesting info and takes you on a boat tour of working greenhouses.
I say take your time, and enjoy a slow evening with no one pushing you to to go on a zillion rides or making you stand in line to meet characters. Get a nice drink and find a nice romantic spot to watch the fireworks.
