Where to start planning!!

Okay so flights & hotels are now booked and we can book dining reservations from Feb but where do you all start with deciding where to eat and what park you are going to visit?
Do some of you have spreadsheet templates that you use to work out what park you are visiting therefore these are our dining options?
Appreciate any thoughts as this seems so daunting!!

We usually make a list of all the places we wanna eat, then just book them roughly, then fine tune them as park hours become firmer (obviously leaving difficult ADRs where they are).

We have a notebook with a page a day on to plan stuff out, then add the FPs at 60 days.

I'd love to build a spreadsheet that automatically told me what the park hours are, so I could select a park then it would tell me which restaurants are a good idea. However the park hours are never that accurate at 180 Days so it doesn't work so well.
 
Once the calendars for park hours (which will likely change but are a starting point) come out, we plan based on them... and then watch for changes to times that will affect the schedule!
