Where is best place to interact with Minnie Mouse?

My niece just loves Minnie and I am looking for something special for her with Minnie. Where would be the best place to interact with Minnie?

From our experience......either the Judge's Tent in Toontown or right out in front of Magic Kingdom.
 
We've had good luck in Animal Kingdom back in Camp Minnie/Mickey. As long as you don't show up right after the FOTLK is letting out, the lines are not that long, and we have never felt rushed.
 
She is at the dinner at Liberty Tree Tavern, and she came to our table 3 times.
 

I second Camp Minnie Mickey at the AK and suggest the Holiday Bus in the World Showcase at Epcot. It's not just for the holiday season, the characters are "on holiday". In our experience, they have attentive character wranglers who create orderly lines for Minnie and Mickey. Good photo opportunities.
 
Try Chef Mickey's. We had an 8:30 dinner PS on a crowded Sunday and ended up eating pretty late. We were one of the last families in the place at the end of the night and all the characters were basically "hanging out" with us at the end of our dinner. Made it worth the wait!!
 
Try Cape May breakfast Buffet over at the BC. She's there in her bathing suit, along with Goofy and either Chip or Dale. Breakfast is great there.
 
we saw minnie in mgm studios and waited in a small line to see her,i got a lovely photo of her with dd and she gave dd a huge hug ( just one of the magic moments i will NEVER forget):D
 
I'm gonna say our best and longest interaction was at her "trailer" in MGM. We've done numerous character meals-- and she always seems rushed at these. Including LTT. More rushed than the other characters (like Chip & Dale). We've seen her numerous times in MGM and it always seemed like nobody else was ever around.
 
I don't know if toontown fair at the MK works the same as it does at DL, but if it does, it's a great place to meet Minnie.

At DL, mickey and minnie wait outside their houses to greet folks and get pictures before they tour the houses. At DL, if you go right when the rope drops (usually an hour after the rest of the park opens), and go straight to Minnie's house, your child can have her all to themselves (or with just a couple of other kids) for a long while, because the entire rest of the early rope-drop crowd heads straight to Mickey's place.
 
I agree with the Judge's Tent in Toon Town Fair. Few people are allowed in at a time and Minnie is just great. No rushing and no crowd.

Yes, I too have found the "Holiday Bus" to be the most pain-free way to see characters. After the bus opens the park, some of the characters wait near the lagoon for meet'n'greets.

Just be on hand at Epcot opening, and when the rope drops and 95% of the people go running to TT and M:S, I've actually seen characters standing there with nothing to do! On my last trip, I was going towards TT, and there was Mickey and his handler standing by the lagoon, ALL ALONE. Minnie was not far away - she had one little one talking to her, and that was it. I saw this several times on my last trip - Mickey looked so sad when I waved to him. ;)

If you go to Toontown within the last half hour before closing, you may end up having the characters all to yourself! This is especially true the later the park stays open.
