We didn't care for Boatwrights all that much. It was the same food court food, at sit down prices.
Chef Mickey's is fun, but loud and a bit chaotic (as other character meals).
I often fell a little rushed at the character meals too.
WL's Roaring forks is mild fun in a pretty setting. Good food. Crisp waffles (although not Mickey shaped). Nice resort to walk around, ride the shuttle boat off the back side if you've got time to relax.
Another place we enjoyed was Coronado Spring's Pepper Market. Best of the moderates, IMHO. It's more of an upscale food court setting, but they have some nice unique items - Southwest style breakfast, fresh fruit. Good quality food. The theming is cute, and a stroll around the lake after is quite nice, maybe rent a boat.
A small spot for a quiet breakfast at your own pace is the quick eat place at GF. Again, simple, inexpensive, but sit outside, and you get a view of the castle in a quiet pretty setting. For the price it can't be beat. You can relax, and take as long as you want - no wait staff coming around.
