Since the parks will closer earlier, where do I look to get the days/opening hrs

Christmas hours aren't available yet but typically they don't close earlier during holiday or summer hours; any peak times. Usually they're open until late. http://www.universalorlando.com/Resort_Information/theme_park_hours.aspx

You won't have any trouble booking the breakfast even a day before you go. The breakfast is held at Confisco's. I'd wait until they post it on the website. There's really no rush.
