I think once a upon a time that Coral Reef at Epcot had Sea Bass - Also look at Flying Fish, Remember that what is shown on line is more of a guide, and not set in stone.
What you are going to see on Disney's menu is a lot of Tilapia. Not one of the better fishes to eat. You might also consider Mahi Mahi(sometimes called dolphin), this also shows up on a lot of Disney's menu. Excellent fish and is caught in the Atlantic and Gulf of Mexico and is readily available.
The above post is correct. WDW has gone to serving sustainable fish. Sea bass is not considered a sustainable fish. If you see them anywhere it will possibly be in very limited quantites at some of the signatures.
If I remember correctly they used to raise sea bass at Epcot but I don't know if they do anymore.
want to try black cod (sometimes referenced as sable fish or butterfish). It's similar to Chilean Sea Bass but is sustainable. A lot of chefs have switched to it. At times The Wave has served it as their sustainable fish.

I live in Chicago, and a local casino's steakhouse used to have it, and I loved it. They don't have it anymore, so I was hoping to get some in Florida.
Honestly, I never gave it much thought about it being sustainable or not.
Hell's Kitchen has it as a menu item on TV, and everytime I see an episode, I want some sea bass! LOL
